Arthaland, the country’s foremost green developer, recently organized the latest edition of Eluria Signature Experiences this time featuring Chef Ricardo Chaneton of the Michelin-starred MONO restaurant in Hong Kong who came to Manila for a 2-night engagement. Eluria Signature Experiences is a series of immersive events for the sophisticated and discerning clientele of its latest prestige project in Makati City, Eluria. The esteemed guests were treated to a special private dining experience with Chef Chaneton’s reinterpretation of Latin American cuisine, bringing exquisite flavors and inventive dishes to the table while respecting traditions.

A pentalingual native of Venezuela, Ricardo Chaneton grew up amongst a mixture of European and South American cooking. In 2022, MONO received one Michelin star from the MICHELIN Guide Hong Kong and Macau, and in the same year, it was ranked 32nd in Asia’s 50 Best Restaurants Awards. MONO is also named in the South China Morning Post’s 100 Top Tables for 2022.
It was a truly an unforgettable evening as the Eluria model unit in Arthaland Century Pacific Tower was bustling with lively conversation and eager anticipation for the seven-course gastronomic delight exclusively created for Eluria. Just like in MONO where Chef Chaneton’s single tasting menu is centered around seasonal and fresh ingredients, he handpicked a selection of herbs from The Garden of Simples, a garden filled with herbs, vegetables and medicinal plants planted carefully and chosen purposefully for its nutritional properties, located at the building’s 31st floor. The journey begins with a Mexican Blue Corn Infladita of oyster tartare and mezcal. It was followed by Carabinero and Pork Chicharron in Venezuelan Vuelve a la vida sauce and a tasty Roasted Peruvian Mashua, Smoked Sardines, and Tamarillo sauce, highlighting the South American root crop, mashua, grown 1800 meters above sea level on the Andes mountains. No meal from the MONO kitchen would be complete without a tasting of the restaurant’s Artisanal Bolivian Kiwicha Sourdough served with Arbequina olive oil from Eva Aguilera. An Imperial Danish Langoustine with Ecuadorian cacao expressions is the fifth course on the menu, and it is one of MONO’s most celebrated creations. A Roasted French Pigeon, compressed eggplant, Argentinian chimichurri, and 21-ingredients Mexican mole is the last savory course of the tasting. To end the meal, the dessert course is a creation of Davao Chocolate Textures, Amazonian tonka bean, and avocado leaf ice cream.
